Thyme is the very voice of the Provençal garrigue. Domaine Salvator’s Thyme Olive Oil is an organic olive oil from Provence, obtained by crushing olives together with fresh sprigs of that emblematic herb. The oil is warm, herbaceous, and gently resinous. Brush it over lamb chops or a rack of lamb before grilling, toss it with roasted potatoes and Mediterranean vegetables, or add it as a finishing touch to a ratatouille or a white bean soup.

Thyme-Roasted Potatoes
- Heat the oven to 400°F (200°C).
- Halve 2 lb (1 kg) of baby potatoes and toss them with 3 tbsp of the thyme oil, salt and 4 unpeeled, crushed garlic cloves.
- Roast for 35 to 40 minutes, turning them halfway through.
- Finish with a raw drizzle of thyme oil and a pinch of fleur de sel.
