Chestnuts, acorns, and roasted hazelnuts: a whole forest floor, steeped in apple balsamic. La Pommée des Bois Vinegar is a seasonal edition of La Pommée, Le Paulmier’s organic apple balsamic, in which these are left to macerate. Tannic and deeply aromatic, it unfolds rich, roasted notes of great depth. Use it to deglaze the pan after venison or wild mushrooms, or drizzle it over roasted butternut squash.

Serving Ideas
A few drops over game, venison or a wild mushroom dish, or to deglaze the pan. Over a foie gras, a terrine or duck breast. With aged cheeses, a Comté or a mature Camembert. Drizzled over a pear dessert or vanilla ice cream. Over roasted butternut squash and autumn vegetables.

Recipe idea

Roasted Butternut Squash with La Pommée des Bois

Serves 4 · 45 min

  1. Heat the oven to 400°F (200°C), peel and seed 1 butternut squash and cut it into large cubes.
  2. Toss with 2 tbsp olive oil, a few sage leaves, salt and pepper, and roast for 30 to 35 minutes, until tender and caramelized.
  3. Transfer to a serving dish and scatter with a handful of toasted hazelnuts.
  4. Drizzle with 1 to 2 tbsp of La Pommée des Bois just before serving.
