Canasuc is a Parisian house that turns cane sugar into small objects: hearts that hang on the rim of a cup, roses, teapots, birds, feathers, croissants and butterflies. Founded in the early 1990s and working from a workshop near Fontainebleau, south of Paris, it makes decorative sugars, rock candy sticks and naturally crystallized candy sugar, entirely in France.

The house

The company was started by Pierre Bosc-Bierne, who came across candy sugar sticks, the crystallized sugar on a stem, and saw that they could be adapted for the espresso cup. Those sticks are still a signature product, but Canasuc's real specialty is the molded sugar: a sugar cube reimagined as a sculpture, something the house describes as its own invention and has refined for more than thirty years.

The method is patient and largely manual. Each new shape starts with a series of prototypes. Sugar is then worked into the molds by hand, left to dry slowly and unmolded with care, because a feather or a butterfly wing in sugar breaks easily. Canasuc works only with cane sugar, in three grades: white, amber and dark, plus an organic cane sugar used for its leaf-shaped range. Colors, where they appear, are natural. The candy sugar and candy sticks are made differently, by natural crystallization, which produces the translucent crystals that catch the light on a tea tray.

The result sits somewhere between a pantry staple and tableware. A box of Canasuc sugars is meant to be brought out with the coffee, set on a saucer or perched on a cup, and noticed.
