Grown on the estate and pressed at its own mill, at the foot of the Alpilles, this oil never travels far. Estoublon’s Picholine Olive Oil is a single-variety extra virgin olive oil made from the château’s Picholine olives. Powerful, peppery, and fiery, it asks for bold partners. Drizzle it over raw artichokes and tomatoes, over grilled lamb or a beef tartare, or try it as an unexpected finish on a sorbet or ice cream.

Pairs with: Smoked fish, beef tartare

Over raw artichokes, tomatoes or a bitter leaf salad. Drizzled over grilled red meat, lamb, a beef carpaccio or a tartare. On bruschetta or warm country bread. To finish a soupe au pistou or grilled vegetables. With smoked fish, or as an unexpected finish for a sorbet or ice cream.

Tomatoes Provençale

Serves 4 · 35 min

  1. Heat the oven to 400°F (200°C) and halve 6 tomatoes; place them cut side up in a baking dish.
  2. Mix 1/2 cup (30 g) of breadcrumbs with 2 chopped garlic cloves, chopped parsley and salt.
  3. Top the tomatoes with the mixture and drizzle generously with Picholine olive oil.
  4. Bake for about 25 minutes, until golden.
