Lychees, pink grapefruit, crushed ice and a splash of tonic make a summer glass that fizzes and perfumes at once: Dammann Frères’ Bali Herbal Tea N°426, a caffeine-free blend of lime blossom and verbena flavored with lychee, grapefruit and rose, is at its heart.

Serves 4 · 10 min + 1 h chilling

  1. Steep 4 tea bags (or 8 g of loose tea) of Bali Herbal Tea in 2 cups (500 ml) of water at 203°F (95°C) for 6 minutes, then remove the tea.
  2. Stir in 2 tbsp of sugar, let cool, then refrigerate for 1 hour.
  3. Divide among 4 glasses with crushed ice, a few lychees and some pink grapefruit segments.
  4. Top up each glass with a splash of tonic water and serve immediately.
