Apricot halves slumped and caramelized at the edges, their hollows pooled with honey: Hédène’s Lavender Honey, the most fragrant of the house, brings its floral notes and light acidity to a warm summer dessert.

- Preheat the oven to 400°F (200°C).
- Halve and pit 8 apricots and arrange them cut side up in a baking dish.
- Spoon 3 tbsp of lavender honey over them and dot with 1 tbsp of butter.
- Roast for 15 to 20 minutes, until tender and lightly caramelized.
- Serve warm with a spoonful of fresh goat’s cheese or Greek yogurt.
