Vanilla Tea French Toast

Serves 2 · 20 min

Heat 3/4 cup (180 ml) of milk to 194°F (90°C), steep 2 Organic Vanilla tea bags in it for 5 minutes, then squeeze and remove them.
Let the milk cool slightly, then whisk it with 2 eggs and 1 tbsp of sugar.
Dip 4 thick slices of brioche in the mixture, turning them to soak both sides.
Cook them in a knob of butter over medium heat until golden and set, 2 to 3 minutes per side.
Serve with maple syrup and sautéed apple slices.
