Its harvest begins in June, when the brambles of the Limousin come into flower, and they keep blooming until September. This is Hédène’s Blackberry Honey, an extremely rare monofloral honey. Creamy in texture and mild in intensity, it offers warm, sweet notes of blackberry, a light character of red berries, and woody undertones that lend it a wild, aromatic depth, before a refined, long-lasting finish. Spread it on warm pancakes, or drizzle it over a panna cotta or a fruit tart.
