Cognac in color, quince in warmth. Hédène harvests its Alder Buckthorn Honey in July in the Landes forest, where alder buckthorn blooms from April through the summer: a rare monofloral honey. Liquid and mellow, it offers long-lasting fruity, aromatic notes and a subtly sweet, green finish, quite unlike any polyfloral honey. Drizzle it over a baked apple or a poached quince, or pair it with a Manchego.

Recipe idea
Baked Apples with Alder Buckthorn Honey
- Preheat the oven to 375°F (190°C).
- Core 4 apples, leaving the bottoms intact, and set them in a baking dish.
- Fill each with a few chopped walnuts, 1 tbsp of alder buckthorn honey and a small knob of butter.
- Pour 1/4 cup (60 ml) of water into the dish and bake for 35 to 40 minutes, until tender.
- Serve warm, spooning the honeyed juices over the apples; the honey’s quince notes suit them beautifully.
