Copper glints in its dark depths. In the Périgord Regional Natural Park, chestnut trees blossom from mid-June to late August, and Hédène harvests its Chestnut Honey from August to mid-September. Liquid and of surprising intensity, it offers powerful woody aromas, warm scents of grilled caramel, and a long finish with a very subtle bitterness: a full-bodied honey of genuine character. Pair it with a Roquefort or a mature Comté, or use it to glaze a duck breast.

Chestnut Honey Glazed Pork Tenderloin

Serves 4 · 40 min

  1. Preheat the oven to 400°F (200°C) and season a 1 1/4 lb (600 g) pork tenderloin with salt and pepper.
  2. Brown it on all sides in 1 tbsp of oil in an ovenproof skillet, about 5 minutes.
  3. Mix 2 tbsp of chestnut honey with 1 tbsp of whole-grain mustard and 1 tbsp of cider vinegar, and brush it over the pork.
  4. Roast for 15 to 20 minutes, basting once, until the internal temperature reaches 145°F (63°C).
  5. Let rest for 5 minutes, then slice and serve with the pan juices.
