Forget the sharp bite of fresh coriander. Hédène’s Coriander Honey comes from north of Bourges, in the Berry, one of France’s finest coriander-growing areas, where the plant blossoms in May and the honey is harvested from late June to early July. Rare and subtle, golden, creamy, and smooth, it offers a fresh perfume and delicate notes of caramel and ripe fruit that melt gently on the palate: mild, sweet, and deeply aromatic. Brush it over carrots or duck as a glaze, or serve it with a Brie.

On warm toast, a crêpe or a slice of brioche. With fresh goat’s cheese, a Brie or a creamy yogurt. In a glaze for carrots, chicken or duck. Stirred into tea or a lemon infusion. Baked into pastries and cakes.

Recipe idea

Coriander Honey Yogurt Cake

Serves 8 · 15 min + 40 min baking

  1. Preheat the oven to 350°F (180°C) and butter a 9-inch (23 cm) round cake pan.
  2. Whisk 3 eggs with 1/2 cup (125 g) of plain yogurt, 1/2 cup (170 g) of coriander honey and 1/3 cup (80 ml) of neutral oil.
  3. Fold in 1 1/2 cups (190 g) of flour mixed with 2 tsp of baking powder and a pinch of salt.
  4. Pour into the pan and bake for 35 to 40 minutes, until a knife inserted in the center comes out clean.
  5. Let cool before serving; the honey’s caramel and ripe-fruit notes shine with a cup of tea.
