From mid-June to early August, lavender blooms across the Lubéron, and the bees follow. The most fragrant of Hédène’s honeys, this creamy monofloral Lavender Honey is harvested from late July to early September. Sweeter than oak honey, it has exceptional floral notes, subtle nuances of fresh fruit, and a light acidity, with woody, green aromas that linger and a hint of sweet almond on the finish. Let it melt softly over warm toast or brioche, or pair it with a fresh goat’s cheese.

Serving Ideas
Spread on warm toast, brioche or a buttered crêpe. With fresh goat’s cheese, a creamy brie or a sheep’s milk tomme. Stirred into plain yogurt or a fromage blanc with fresh fruit. To glaze roasted apricots, peaches or a lavender panna cotta. Stirred into a cup of tea or baked into pastries.

Roasted Apricots with Lavender Honey

Serves 4 · 25 min

  1. Preheat the oven to 400°F (200°C).
  2. Halve and pit 8 apricots and arrange them cut side up in a baking dish.
  3. Spoon 3 tbsp of lavender honey over them and dot with 1 tbsp of butter.
  4. Roast for 15 to 20 minutes, until tender and lightly caramelized.
  5. Serve warm with a spoonful of fresh goat’s cheese or Greek yogurt.
