Serves 4 · 25 min

Soften a chopped onion in a spoonful of olive oil, then add 4 sliced zucchini.
Cover with 3 cups (750 ml) of stock and simmer for 12 minutes.

Serve hot or chilled, with a swirl of basil olive oil in each bowl.
