For a long time, cloves were a monopoly of the Portuguese and Dutch trading companies. The clove tree, which grows mainly by the sea, was introduced to Madagascar and Zanzibar in the 18th century and made both islands major producers; the organic Cloves from Place des Épices have full, handsome heads, the mark of a perfect clove. Their fragrance is intensely floral. Stud an onion with a few for a pot-au-feu, or drop them into a mulled wine.

Recipe idea
Clove Masala Chai
- Simmer 1 1/4 cups (300 ml) water with 4 cloves, 2 crushed cardamom pods, a small cinnamon stick and 3 slices of fresh ginger for 5 minutes.
- Take off the heat, let cool for 1 minute, add 2 black tea bags and steep for 4 minutes.
- Remove the tea bags, add 1 cup (240 ml) milk and 2 tsp sugar, and warm gently without boiling.
- Strain into two cups and serve hot.
