Every white peppercorn begins as a red one. These White Kampot Peppercorns from Place des Épices are made from red pepper soaked overnight, then stripped of its husk. Protected by a PGI since 2010, red and white Kampot peppers are extremely rare, since they must be picked by hand at full ripeness by a large workforce, and Kampot is one of the few regions to produce red pepper. This organic white pepper develops a powerful bouquet and delicate aromas, its intense heat concealing notes of fresh herbs and lemon. Grind it over scallops, white fish, or a creamy sauce.

Recipe idea
Seared Scallops with White Kampot Pepper
- Pat 8 large sea scallops dry and season them with salt.
- Sear them in 1 tbsp very hot oil for 90 seconds per side, until golden.
- Add 2 tbsp butter and a squeeze of lemon to the pan and baste the scallops for 30 seconds.
- Serve at once, finished with a few turns of the white Kampot pepper mill.
