Its forest is the Orne, its raw material the annual shoots of Douglas fir harvested there. Le Paulmier macerates them in barrels in an artisanal cider vinegar so they release their full aromatic range, and the resulting Fir Vinegar is marked by pronounced, persistent citrus notes that range from lemon to lemongrass. A few drops brighten oysters, a ceviche, or smoked fish; it also makes a fine marinade for venison or duck.

Recipe idea

Trout Tartare with Fir Vinegar

Serves 4 · 20 min

  1. Finely dice 14 oz (400 g) very fresh skinless trout fillets and keep them chilled.
  2. Mix with 1 finely chopped shallot, 1 tbsp chopped dill and 2 tbsp olive oil.
  3. Just before serving, season with 1 tbsp of the fir vinegar, salt and pepper.
  4. Shape into rounds on chilled plates and serve with toasted rye bread.
