Fresh black elderflowers, steeped in cider vinegar, give it the lightness of a hedgerow in bloom. Le Paulmier makes this delicate, aromatic Elderflower Apple Cider Vinegar from a blend of sweet and bittersweet cider apple varieties, and the flowers lend it a light, floral character, set off by a clean, refreshing acidity. A few drops over oysters or a sea bream carpaccio, or over strawberries and melon, are all it needs.

Serving Ideas
In a delicate vinaigrette for green leaves, asparagus or cucumber. Over oysters, a sea bream carpaccio or a salmon tartare. To deglaze or marinate white fish, chicken or scallops. A few drops over strawberries, melon or a fruit salad.

Recipe idea

Asparagus with Elderflower Vinaigrette

Serves 4 · 20 min

  1. Trim 1 lb (450 g) green asparagus and cook in salted boiling water for 4 to 6 minutes, until just tender.
  2. Drain and plunge into ice water to keep them bright green, then pat dry.
  3. Whisk 1 1/2 tbsp of the elderflower cider vinegar with 4 tbsp olive oil, a pinch of salt and some chopped chives.
  4. Arrange the asparagus on a platter, spoon the vinaigrette over and top with a few shavings of parmesan.
