In April, in the alder groves of Normandy, the wild garlic that grows there unbidden is picked by hand. Le Paulmier macerates it in casks with acidulated cider to make this Wild Garlic Apple Cider Vinegar, a delicate, aromatic organic vinegar with the fresh, subtle character of spring wild garlic. Whisk it into a vinaigrette for new potatoes or steamed green beans, or add a few drops to eggs.

In a vinaigrette for new potatoes, steamed green beans or a spring salad. To deglaze chicken, lamb or white fish. Over a tomato salad or grilled vegetables. In a homemade mayonnaise or a sauce for fish. A few drops over eggs, or in a marinade for chicken or fish.

New Potato Salad with Wild Garlic Vinaigrette

Serves 4 · 30 min

  1. Cook 1 1/2 lb (700 g) new potatoes in salted water for 15 to 20 minutes, until tender.
  2. Meanwhile, whisk 2 tbsp of the wild garlic cider vinegar with 1 tsp mustard, salt and pepper, then whisk in 5 tbsp olive oil.
  3. Halve the potatoes while still warm and toss them with the vinaigrette so they soak it up.
  4. Add 1 thinly sliced spring onion and a handful of chopped parsley, and serve warm or at room temperature.
