Each spring, the white heather of the Var bursts into bloom. Hédène, the French honey house that works with passionate beekeepers in carefully selected French terroirs, gathers this Heather Honey in the heart of the wild mountains of the Var, exclusively from white heather (Erica arborea). Raw, cold-extracted and unpasteurized, it has an amber color with golden highlights and a creamy texture that melts delicately in the mouth. Intense and full of character, it reveals a caramelized aroma, notes of caramel, cocoa and licorice, and a slightly bitter edge. Pair it with an aged cheese, or bake it into a gingerbread.
