High on the slopes of a volcano in El Salvador lies Finca Himalaya, a postcard plantation. There Mauricio Salaverria, a fifth-generation grower, cultivates the Bourbon Rouge behind these Himalaya Bourbon Rouge Coffee Beans, in shade-grown, fully parceled plots, processed naturally and dried on mats. One of the first coffees sourced by Terres de Café, the Paris specialty roaster founded in 2009, it is roasted in France for espresso and gentle brewing methods. The nose opens on chocolate and candied red fruit; the round, ample cup brings baking chocolate, stewed red berries, dried apricot and maple syrup. Pull it as an espresso, with a square of dark chocolate.
