Barely cooked, this black nougat keeps all its softness. For the Traditional Soft Black Nougat known as Pénitent Noir, Domaine Salvator, the Pinatel family estate in the heart of Provence, supplies the almonds, which make up half the bar; lavender honey from Provence PGI, from Miel des Pénitents in Les Mées, accounts for 20%; and the confectioner and chocolatier Manon, in Peyruis, makes the nougat, with fewer than ten kilometers between the three producers. Supple and melting, it keeps the delicate aromas of toasted almond and a beautiful lavender honey. Set it among the thirteen desserts of a Provençal Christmas.

Serving Ideas
Among the thirteen desserts of a Provençal Christmas. Cut into thin slices with an espresso after dinner. On a cheese board, beside an aged goat cheese. With a glass of Provençal vin cuit or a sweet Muscat.
The Maker
Some olive trees have watched the centuries go by, and one family has watched over them for five generations. Since 1902, the Pinatel family has tended these centuries-old trees at Domaine Salvator, a family-owned producer of organic olive oils in the heart of Provence. Every oil comes from olives grown in the family’s own groves and is made using traditional methods. The result is a range of organic extra virgin olive oils prized for their rich aromas and authentic Provençal character, as much at home in everyday cooking as in fine cuisine.
