Whole lemons go into the mill alongside the olives. Domaine Salvator’s Fresh Lemon Olive Oil is born of that pairing: organic olives and whole lemons are crushed together and the oil is extracted directly from the combined paste, a time-honored technique that fully integrates the zest and juice of the lemon. The oil is naturally soft, fruity, and gently tangy. Drizzle it over grilled fish or prawns, toss it with linguine and parmesan, or use it in place of butter in a lemon cake.

Lemon Linguine
- Cook 7 oz (200 g) of linguine and set aside 1/2 cup (120 ml) of the cooking water.
- Off the heat, toss the drained pasta with 3 tbsp of the lemon olive oil and 1/2 cup (40 g) of grated Parmesan.
- Add a splash of cooking water and toss until glossy.
- Finish with lemon zest, black pepper and a few basil leaves.
