At least 60 days in oak barrels before it reaches the table. This organic Balsamic Vinegar comes from Château d’Estoublon, an iconic Provençal estate founded in 1489 in the Alpilles, which blends organic cooked grape must with organic red wine vinegar before that patient aging. The nose is sweet and sour, with a long, fruity, and woody finish; on the palate, classic balsamic acidity gives way to delicate, persistent notes of fruit. Add a few drops over a burrata, parmesan shavings, or figs.

Serving Ideas
Over a tomato and mozzarella salad or burrata. A few drops over parmesan shavings, strawberries or figs. To deglaze duck breast or calf’s liver, or over grilled meats and vegetables. In a vinaigrette with a fruity olive oil.

Burrata with Heirloom Tomatoes and Balsamic

Serves 4 · 10 min

  1. Slice 1 1/2 lb (700 g) ripe heirloom tomatoes and arrange them on a platter.
  2. Season with fleur de sel and pepper, and drizzle with 2 tbsp fruity olive oil.
  3. Place 2 burrata in the center and scatter with fresh basil leaves.
  4. Finish with 1 to 2 tbsp of the balsamic vinegar over the tomatoes and burrata, and serve with toasted bread.
