Fresh shallot at first, then a softer note, like shallots slowly candied. Inspired by Provence, Estoublon’s Shallots Vinegar is an expressive red wine vinegar carried by the aromatic intensity of fresh shallots, its liveliness softened by that natural sweetness. Balanced and flavorful, it leaves a lovely impression on the palate, at once spicy and delicate. Add a few drops over oysters, as tradition dictates, or deglaze a steak or a duck breast with it.

Serving Ideas
A few drops over oysters, as tradition dictates. In a vinaigrette for a green salad, leeks or lentils. To deglaze a steak, calf’s liver or duck breast. Over steamed potatoes or a warm charcuterie salad.

Recipe idea

Leeks Vinaigrette

Serves 4 · 25 min

  1. Trim and rinse 8 small leeks, then simmer them in salted water for 12 to 15 minutes, until tender.
  2. Drain well and let them cool slightly on a clean towel.
  3. Whisk 2 tbsp of the shallot vinegar with 1 tsp Dijon mustard, salt and pepper, then whisk in 5 tbsp olive oil.
  4. Arrange the leeks on a platter, spoon over the vinaigrette and sprinkle with a chopped hard-boiled egg and parsley.
