Chestnut, twice over: as flavor, and as a touch of chestnut liquor. For this Chestnut Mustard, Domaine des Terres Rouges, an Alsatian condiment house, stone-mills whole mustard seeds in the traditional manner before flavoring them with chestnut. The result is gently sweet and nutty, with a smooth, rounded character. Serve it with roast poultry, turkey, or game, or whisk it into a vinaigrette for a salad of walnuts and pears.
