Some condiments step forward; this one steps aside. Le Paulmier makes its artisanal Rice Vinegar from Camargue rice, through alcoholic and then acetic fermentation. Delicate and authentic in character, it seasons with restraint and lets the ingredients it accompanies express themselves fully. Use it to season sushi rice for maki and nigiri, for quick pickles of cucumber, radish, or carrot, or in a light dressing for a seaweed salad.

Recipe idea

Vegetable Sushi Rice Bowls

Serves 4 · 35 min

  1. Rinse 1 1/2 cups (300 g) sushi rice until the water runs clear, then cook it according to the package directions.
  2. Warm 1/4 cup (60 ml) of the rice vinegar with 1 tbsp sugar and 1 tsp salt until dissolved.
  3. Gently fold the seasoned vinegar into the hot rice with a spatula and let it cool to room temperature.
  4. Divide among bowls and top with sliced cucumber and radishes, grated carrot, shelled edamame, strips of nori and toasted sesame seeds.
