Apple must, reduced slowly, patiently, until only its essence remains. Le Paulmier’s La Pommée Apple Vinegar is an artisanal organic apple balsamic: must from a blend of sweet and bittersweet Normandy cider apples is slowly reduced, then combined with a condiment born of the acetic fermentation of cider. Concentrated, smooth, and naturally sweet, it offers a deep apple character and a long, mellow finish. Drizzle a few drops over foie gras, a mature Camembert, or a tarte tatin.

Reduced country apple must (approx. 60%) • Condiment from the acetic fermentation of cider (approx. 40%).
Serving Ideas
A few drops over foie gras or a duck breast, or as a glaze for a pork fillet. Over a mature Camembert, a Comté or parmesan shavings. In a vinaigrette for a green salad with apples and walnuts. Drizzled over strawberries, a vanilla ice cream or a tarte tatin. Over roasted vegetables, just before serving.

Recipe idea

Pork Tenderloin Glazed with La Pommée

Serves 4 · 40 min

  1. Heat the oven to 400°F (200°C) and brown a 1 1/2 lb (700 g) pork tenderloin on all sides with 1 tbsp oil in an ovenproof skillet.
  2. Brush it with 2 tbsp of La Pommée and roast for 10 minutes.
  3. Brush with 1 more tbsp of La Pommée and roast for 5 to 10 minutes more, until the pork reaches 145°F (63°C) inside.
  4. Let rest for 5 minutes, slice and serve drizzled with the pan juices and a few more drops of La Pommée.
