Although François Pralus usually favors single origins, La Salsa 75% Dark Chocolate Bar is one of his rare blends: made in Roanne, it pairs Forastero cacao from Ghana with the subtle flavors of Cuban Trinitario. Its first impression is richly chocolatey and slightly tangy, before floral and honeyed notes open up on the finish, a lively character that lives up to its name. Enjoy a square with an afternoon espresso or black tea, or shave it over vanilla ice cream.

The Ingredients
Cocoa from Cuba and Ghana (75% minimum) • Sugar • Cocoa butter • Emulsifier: sunflower lecithin. Allergens: Made in a workshop that uses tree nuts and milk.
Serving Ideas
A square with an espresso or a black tea in the afternoon. With fresh raspberries, apricots or a drizzle of honey. Shaved over a vanilla ice cream or a fruit tart. Alongside a glass of aged rum or a sweet white wine.

Recipe idea

Dark Chocolate Honey Granola

Serves 6 · 10 min + 25 min baking

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Mix 2 1/2 cups (225 g) rolled oats, 1/2 cup (70 g) chopped almonds, 1/4 cup (60 ml) honey, 3 tbsp melted butter and a pinch of salt.
  3. Spread on the sheet and bake for 20 to 25 minutes, stirring halfway, until golden.
  4. Let cool completely, then stir in half of the La Salsa 75% dark chocolate bar (1.75 oz / 50 g), chopped, and 1/2 cup (60 g) diced dried apricots.
  5. Serve with yogurt or milk and fresh fruit, and store the rest in an airtight jar.
