Olives allowed to mature give this oil its roundness. Domaine Salvator’s Légende Olive Oil is a remarkably smooth virgin olive oil from Haute-Provence, made from matured Picholine and Tanche olives. Rich and fruity, it offers notes of ripe olives, prunes, and vanilla, with a delicate hint of red fruit preserves on the finish, while its pungency and bitterness stay particularly discreet. Pour it over delicate white fish cooked en papillote, stir it into a potato purée, or bake it into an olive oil cake.
