The bright, slightly tart character of the fruit is softened by the gentle Provençal fragrance of the honey, for a melting, fruity texture and an unexpected taste. Meeker raspberries (54%) • Sugar • French lavender honey (9%) • Lemon juice • Fruit pectin. Made in a workshop that also handles nuts, milk, eggs and gluten.

Raspberry and Lavender Honey Tart

Serves 6 · 20 min

  1. Spread 1/3 cup (110 g) of the raspberry jam with lavender honey over the bottom of a prebaked 9-inch (23 cm) shortcrust tart shell.
  2. Whip 1/2 cup (120 ml) cold heavy cream to soft peaks, then gently fold in 4 oz (115 g) mascarpone.
  3. Spread the cream over the jam.
  4. Cover with 2 cups (250 g) fresh raspberries, tips pointing up.
  5. Brush them with 2 tbsp warmed jam for a glossy finish and serve within the hour.
