The linden trees of Lorraine keep their own calendar. Their blossoms open unpredictably, generally from mid-May to July, before the July harvest of Hédène’s Linden Honey. White in color, it carries the scent of the linden flower in a subtler form, with a unique, powerful flavor and menthol overtones. Its sweetness is surprising, its taste long-lasting and free of acidity; like acacia honey, it is distinguished by its aromatic finesse. Stir a spoonful into a cup of tea or an herbal infusion.

Recipe idea
Linden Honey Mint Infusion
- Place 6 fresh mint leaves and 2 lemon slices in a teapot.
- Pour in 2 cups (500 ml) of water heated to 205°F (95°C) and steep for 5 to 6 minutes.
- Strain into two cups and let cool for a minute.
- Stir 1 tsp of linden honey into each cup; its menthol overtones echo the fresh mint.
