White hawthorn blossoms last only briefly, and only if the weather allows. In the Pilat Regional Natural Park, in Rhône-Alpes, that fleeting flowering makes each harvest an exceptional event, and Hédène’s Hawthorn Honey one of France’s rarest honeys. Pale to amber in color and creamy, it offers intensely fruity, perfumed aromas, remarkable softness, and a long, lingering finish: a distinguished honey, as delicate on the palate as it is difficult to obtain. Drizzle it over fromage blanc or a panna cotta.

On warm toast, a crêpe or a slice of brioche. With fresh goat’s cheese, a Brie or a sheep’s milk cheese. Drizzled over fromage blanc, a panna cotta or a fruit salad. Stirred into tea or an herbal infusion. Baked into pastries and cakes.

Recipe idea

Hawthorn Honey Panna Cotta

Serves 4 · 15 min + 4 h chilling

  1. Sprinkle 1 1/2 tsp (5 g) of powdered gelatin over 3 tbsp of cold water and let it soften for 5 minutes.
  2. Heat 1 1/2 cups (350 ml) of heavy cream and 2/3 cup (150 ml) of milk with 1/4 cup (85 g) of hawthorn honey until steaming, without boiling.
  3. Off the heat, stir in the gelatin until dissolved.
  4. Pour into four ramekins or glasses and refrigerate for at least 4 hours, until set.
  5. Serve with fresh berries and a thin drizzle of hawthorn honey.
