Happy Dreams N°624 from Dammann Frères is a caffeine-free infusion in which lemongrass, star anise, and rosehip meet lemon peel, bitter orange leaves, clementine essential oil, and a touch of vanilla. Fresh, lively, fruity notes of lemon and clementine grow round beneath a gentle, woody hint of vanilla, for a warm, sweet cup. Recipe idea

Happy Dreams Clementine Ice Pops

Makes 6 · 15 min + 5 h freezing

Steep 3 tea bags (or 6 g of loose tea) of Happy Dreams in 1 1/2 cups (375 ml) of water at 203°F (95°C) for 6 minutes, then remove the tea.
Stir in 2 tbsp of honey and the juice of 2 clementines, then let cool.
Place a few clementine segments in 6 ice-pop molds and fill them with the infusion.
Freeze for at least 5 hours before unmolding.
