Tisane du Roy N°429, from Dammann Frères, one of France’s oldest tea houses, founded in 1692, is a naturally caffeine-free herbal infusion, floral and gourmand, that also brings together orange peel, bergamot peel, and lemongrass, adorned with flower petals and warmed by red fruits. Beautifully layered and aromatic, it suits any hour, but the evening becomes it: after dinner, serve it as a gentle digestif, with orange blossom madeleines.

Recipe idea

Crêpes with Royal Orange Herbal Sauce

Serves 4 · 20 min

Steep 4 g of Tisane du Roy in 3/4 cup (180 ml) of water at 203°F (95°C) for 6 minutes, then strain.
In a large skillet, melt 3 tbsp of butter with 1/4 cup (50 g) of sugar until lightly caramelized, then carefully add the infusion and the juice of 1 orange and simmer for 3 to 4 minutes, until syrupy.
Fold 8 ready-made crêpes into quarters and warm them in the sauce, turning once.
Serve right away with a handful of raspberries or other red berries.
