Clear as glass, it slides off the spoon. Acacia blossoms from late April to late June, and Hédène harvests its Acacia Honey in Burgundy from mid-May to the end of July, using purely traditional beekeeping methods. Particularly fluid, sweet, and floral, it offers refined aromas, a lightly fruity taste, and a subtle scent, without acidity or bitterness. Balanced and harmonious, it pleases the whole family: stir it into tea or warm milk, or drizzle it over Greek yogurt.

Stirred into tea, an herbal infusion or warm milk. Drizzled over fromage blanc, Greek yogurt or fresh fruit. With fresh goat’s cheese or a creamy Brie. In a vinaigrette, a glaze for carrots or a light cake. On warm brioche at breakfast.

Recipe idea

Acacia Honey Lemonade

Serves 4 · 10 min + 1 h chilling

Squeeze 4 lemons to get about 1/2 cup (120 ml) of juice.
Whisk the juice with 1/3 cup (110 g) of acacia honey until smooth; this fluid honey blends in easily.
Add 4 cups (1 l) of cold water, stir and refrigerate for 1 hour.
Serve over ice with lemon slices and a sprig of mint.
