Wild, not cultivated: that is the first thing to know about Voatsiperifery. Granhota infuses this peppercorn from Madagascar, with its strong, flavorful aromas, in red wine vinegar to make its Madagascar Peppercorns Vinegar. Spicy and bold, with notes of undergrowth and resin, it awakens the palate and adds depth to any preparation. Deglaze a steak or lamb chops with it, or dress a winter salad of lamb’s lettuce and lentils.

Steak with Wild Pepper Vinegar Pan Sauce

Serves 2 · 20 min

  1. Season 2 steaks (about 8 oz / 225 g each) with salt and sear in 1 tbsp oil over high heat for 3 to 4 minutes per side, until they reach at least 145°F (63°C) inside.
  2. Let the steaks rest on a warm plate while you soften 1 chopped shallot in the pan with 1 tbsp butter.
  3. Deglaze with 2 tbsp of the Madagascar peppercorn vinegar, scraping up the browned bits, then add 1/3 cup (80 ml) beef stock.
  4. Simmer for 2 minutes, swirl in 1 more tbsp butter and pour the sauce over the steaks.

The Maker
Wine rests, turns, and, given time, becomes something else entirely. Granhota is a French artisan vinegar house founded by master vinegar maker Laurent Faure, with one aim: to restore the tradition and elegance of authentic French vinegar-making. Its vinegars are crafted in the Languedoc from carefully selected wines, through slow traditional fermentation that includes the historic Orléans process, to preserve rich aromas and complex flavors. The range brings together wine vinegars, balsamic vinegars, flavored vinegars, and gourmet condiments. At Granhota, vinegar is once again treated as a product of patience and of French gastronomy.
