The first oil of the season, straight from the press and left unfiltered. Estoublon’s Olive Oil New Harvest 2025, the Nouvelle Récolte blend, is the first fruit of the 2025 Olivades: a freshly pressed extra virgin olive oil made from Béruguette, Bouteillan, Grossane, Salonenque, and Picholine olives. It shows a pronounced green fruitiness and a velvety texture, with notes of cut grass enriched by subtle aromas of raw artichoke and hazelnut. Pour a thread over a butternut squash velouté just before serving, to taste the new season.

New Harvest Toasts

Serves 4 · 10 min

  1. Toast 4 thick slices of country bread.
  2. Rub them with a cut garlic clove, then with half a ripe tomato.
  3. Pour the new harvest oil generously over each slice.
  4. Sprinkle with fleur de sel and serve at once, while the oil is at its freshest.
