For its PDO Vallée des Baux-de-Provence Olive Oil, Estoublon blends the estate’s five olive varieties, harvested from early November to mid-December and pressed at its own mill within 24 hours of picking. Balanced, intense, and vegetal, it offers touches of freshly cut grass and a slightly fiery finish, with a fine harmony among the varieties. An oil for every day: pour it over asparagus and green beans, or over salads with a pinch of fleur de sel.

Serves 6 · 10 min

Blend 1 cup (150 g) of pitted black olives with 1 tbsp of capers, 3 anchovy fillets and a garlic clove.
With the machine running, pour in 1/3 cup (80 ml) of the olive oil.
Add a squeeze of lemon and some pepper.
Serve on toasted bread or with raw vegetables.
