Hédène gathers its Fir Honey in this forest of the Vosges mountains, in Lorraine, one of France’s most beautiful fir forests, and because production is irregular and unpredictable, each harvest is a precious find. Rare and lightly syrupy, noble and complex, it reveals woody overtones, ripe fruit, maple syrup, and delicate notes of resin, with a sweet, long-lasting finish. Serve it with a Munster, or stir it into tea on a winter evening.

Recipe idea

Pancakes with Fir Honey

Serves 4 · 25 min

Whisk 1 1/2 cups (190 g) of flour, 2 tsp of baking powder and a pinch of salt with 1 1/4 cups (300 ml) of milk, 1 egg and 2 tbsp of melted butter.
Cook ladlefuls of batter in a lightly buttered skillet over medium heat for about 2 minutes per side, until golden.
Stack the pancakes and drizzle generously with fir honey, whose maple syrup and resin notes suit them perfectly.
Top with a few walnuts or blueberries and serve warm.
