In Minami Yamashiro, in Japan’s Uji region, Mr. Inaoki, a renowned producer, grows the leaves for this ceremony matcha. Selected by Dammann Frères, one of France’s oldest tea houses, founded in 1692, Minami Yamashiro Ceremony Matcha blends the Okumidori and Yabukita cultivars into a well-balanced, harmonious matcha that is both rich in umami and mellow. Its profile is vegetal, with a briny note, and it comes in a 20g metal tin. Whisk it in water at 176°F (80°C) until a fine foam forms, and serve it in a bowl with a wagashi or a plain shortbread.
