Around the full moon of October, while the Bouteillan olives are still very young, the harvest begins. On the Martin family estate near the Gorges de l’Ardèche, La Magnanerie grows, presses, and filters them, and from them alone makes Apogée Olive Oil, its premium cuvée: a single-variety organic extra virgin olive oil. Picked at such an early stage, the olives retain all their liveliness and aromatic intensity, and the oil comes out a vibrant green, bold and expressive. Drizzle it over grilled white fish or a sea bream carpaccio, or bake it into an olive oil cake.

Pairs with: Carpaccio, grilled fish

Over grilled or steamed white fish, or a sea bream carpaccio. In a vinaigrette for lamb’s lettuce, asparagus or new potatoes. Drizzled raw over crisp vegetables, fresh goat’s cheese or a potato purée. In baking, for an olive oil cake or shortbread.

Sea Bream en Papillote

Serves 2 · 25 min

  1. Heat the oven to 400°F (200°C).
  2. Place 2 sea bream fillets on sheets of parchment with lemon slices, a sprig of thyme and a few cherry tomatoes.
  3. Drizzle each with 1 tbsp of Apogée olive oil, season, then fold the paper into sealed parcels.
  4. Bake for 12 to 15 minutes and open at the table, with a raw drizzle of oil.
