For this Chestnut Mustard, Domaine des Terres Rouges, an Alsatian condiment house, stone-mills whole mustard seeds in the traditional manner before flavoring them with chestnut. The result is gently sweet and nutty, with a smooth, rounded character. Serve it with roast poultry, turkey, or game, or whisk it into a vinaigrette for a salad of walnuts and pears.

Recipe idea

Turkey, Brie and Chestnut Mustard Panini

Serves 4 · 15 min

  1. Spread 8 slices of country bread with the chestnut mustard, about 1 tsp per slice.
  2. Top 4 of the slices with 7 oz (200 g) sliced cooked turkey breast, 5 oz (150 g) sliced Brie and a few thin slices of pear.
  3. Close the sandwiches and brush the outsides lightly with olive oil or melted butter.
  4. Cook in a panini press or a skillet over medium heat for 3 to 4 minutes per side, pressing down, until golden and the Brie is melting.
