It all starts in traditional open-air orchards, where local sweet and bitter apples are harvested for the estate’s own ciders. Le Paulmier then acetifies those ciders into this organic Apple Cider Vinegar and matures it for at least six months in casks, which gives it a rounded, complex acidity and genuine depth of character. Unpasteurized, with no added sulfites, it shines in a vinaigrette for cabbage or grated carrots, or to deglaze pork chops.

Normandy-Style Mussels with Cider Vinegar

Serves 4 · 25 min

  1. Scrub 4 lb (1.8 kg) mussels, discarding any that are broken or stay open when tapped.
  2. In a large pot, soften 2 chopped shallots in 2 tbsp butter, then add the mussels and 3 tbsp of the cider vinegar.
  3. Cover and cook over high heat for 5 to 7 minutes, shaking the pot, until the mussels open; discard any that stay closed.
  4. Stir in 1/2 cup (120 ml) crème fraîche and a handful of chopped parsley, and serve with crusty bread.
