That is the surprise of the Ecuador 75% Dark Chocolate Bar, crafted in Roanne by François Pralus from organic Nacional cacao of Ecuador, also known as Arriba. One of the most prized varieties in the world, often compared to Criollo for its finesse, it has larger, more tannic beans that give the chocolate a distinctive aromatic profile, with floral notes and remarkable elegance. Pair a square with a green tea, or with a glass of Champagne.

The Ingredients
Cocoa (75% minimum) • Sugar • Cocoa butter • Emulsifier: sunflower lecithin. Allergens: Made in a workshop that uses tree nuts and milk.
Serving Ideas
A square with an espresso, a green tea or a glass of aged rum. With fresh raspberries, candied orange or toasted almonds. Melted into a ganache, a mousse or a warm chocolate sauce. Alongside a glass of Champagne, Banyuls or a tawny port.

Recipe idea

Silky Chocolate Cream Pots

Serves 4 · 15 min + 3 h chilling

  1. Finely chop the Ecuador 75% dark chocolate bar (3.5 oz / 100 g) and place it in a bowl.
  2. Bring 3/4 cup (180 ml) heavy cream, 1/4 cup (60 ml) whole milk and 1 tbsp sugar just to a simmer.
  3. Pour the hot cream over the chocolate, wait 1 minute, then whisk gently until smooth and glossy.
  4. Divide among 4 small glasses and chill for at least 3 hours.
  5. Top each pot with a few fresh raspberries just before serving.
