A red tin, and inside, Montélimar’s most famous sweet, wrapped piece by piece. Arnaud Soubeyran, the historic confectioner founded in Montélimar in 1837, has cooked its soft Nougat de Montélimar in the cauldron ever since, following a recipe that has barely changed. Lavender and wildflower honey binds almonds and pistachios, which make up 30% of the nougat, with egg white into a tender, honeyed bite studded with nuts. The individually wrapped pieces are gathered in a red metal tin, a gift easily slipped under the tree. Pass the tin around with coffee at the end of the holiday meal.

The Maker
Almonds, honey, and time: the recipe is old, and it has never needed to hurry. Founded in 1837 in Montélimar, the birthplace of Nougat de Montélimar, Arnaud Soubeyran is a historic French confectionery house, recognized as one of the oldest nougat makers in France. For nearly two centuries, the house has kept its nougat-making expertise alive through traditional recipes and quality ingredients, honey and almonds first among them. Its nougats are still made by traditional methods, including slow cooking in copper kettles. The range spans soft nougat, hard nougat, gourmet sweets, and confections rooted in French culinary heritage.
