Fresh tarragon, cloves, and cinnamon, left to steep in white wine vinegar. That, in short, is Laurent Agnès’s Tarragon Vinegar, an artisanal French vinegar for which the fresh tarragon is carefully selected before maceration. Aromatic, gently spiced, and subtly sweet, it brings the herbaceous freshness of tarragon over a lively acidity of 7%. Stir it into a béarnaise sauce, or add a few drops to fish and seafood as a finishing touch.

Quick Béarnaise Sauce

Serves 4 · 25 min

  1. Simmer 3 tbsp of the tarragon vinegar with 1 finely chopped shallot, 2 tbsp water and a pinch of pepper until only about 1 tbsp of liquid remains, then let cool slightly.
  2. Whisk in 3 egg yolks, then set the pan over very low heat or over a pan of barely simmering water.
  3. Whisk constantly until the yolks thicken and turn creamy, about 3 to 5 minutes.
  4. Gradually whisk in 1/2 cup (115 g) diced butter, a few pieces at a time, until smooth and glossy.
  5. Stir in 1 tbsp chopped fresh tarragon, season with salt and serve right away with a steak or fish.
