It offers a harmony of round, generous flavors and a unique balance between aroma and acidity. Mist it over a green or tomato salad for a lively yet even seasoning, or over a steak just before serving.

Serving Ideas

A fine mist over a green, tomato or goat cheese salad, for a lively yet even seasoning. In a red meat marinade, or sprayed over grilled meats or a beef tartare. To lift lentil salads, roasted beetroot or crudités. A touch over pan-fried liver or a steak just before serving. Over oysters, shellfish or a chilled gazpacho.

Recipe idea

Chilled Tomato Gazpacho

Serves 4 · 20 min + 2 h chilling

Roughly chop 2 lb (900 g) ripe tomatoes, 1/2 cucumber, 1 red bell pepper, 1 small shallot and 1 garlic clove.
Blend with 1/4 cup (60 ml) olive oil, a slice of stale bread and a pinch of salt until very smooth.
Chill for at least 2 hours, then adjust the seasoning.
Pour into bowls and finish each one with a few sprays of the red wine vinegar just before serving.
